Lemon Rice with green onions
Cook Rice with little salt and oil and Set it aside.
Heat oil, Add onions & sautÚ for 1 minute until limp. Add Madras Masala(per taste). Add cooked rice. Add 2 Tblspn of lemon juice. Mix well. Add Chopped tomatoes and cilantro. Reduce the heat to low and cook for 3-5 minutes.
Variation:- This dish is great for left over rice. Use leftover rice instead of cooked rice. Follow the recipe. Just add 1/4 cup water to heat thru.
* Variation:- Add shrimps or 1 cup mixed vegetables as soon as onions are limp. SautÚ for 1-2 minute. Follow the recipe.
