Okra in Bombay Masala Okra in Bombay Masala
Heat oil over high heat and cut okra. Add 1/4 tspn of salt and quickly sauté until just beginning to turn pink. Set it aside. Heat oil, add chopped onions (and Potatoes). Sauté till limp(and Potatoes are cooked). Add Bombay masala and tomatoes. Add sautéed okra. Adjust salt. Cook for couple minutes until tomatoes are soft. Add chopped cilantro. Serve with roti or naan. Variation:- With red potatoes
