Salmon with green onions

Cilantro, finely minced

Large or 1/2-3/4 Canned tomatoes

For best results use tomatoes with jalapeno. Grind in food processor for smoother texture.

Fry Fish over medium high heat on both sides until light pink. Set it aside. 

Heat oil, add Madras Masala add tomatoes, if fresh tomatoes then cover and cook until soft. Add onions & sauté for 1 minute.  Adjust salt. Place sautéed salmon on top. Add cilantro. Adjust the consistency of sauce by adding water. Cover. Reduce the heat to low and cook for 3-5 minutes. 

Variation:- Great with shrimps or any firm fish.
