Tandoori
Tikka
Preperation:
Prepare Tandoori chicken by marinating chicken cubes
in tandoori masala.
Marinate
for 20minutes to overnight. Sauté in a pan with little
oil until done and set it aside. In another pan add
1-2tspn oil. Sauté 1-2tspn Tikka masala for 1-2 Tbspn of
tomato paste. Add cream or combination of cream and
water or milk. Add Tandoori chicken. Adjust salt. Bring
to boil. Serve with plain rice or naan.
For Food service:
10 lbs of cubed chicken breast
10 Tblspn of tandoori Masala
2lbs of yogurt. Marinate overnight.
Sauté 10oz of tikka masala in 1 cup of oil for 30-40
seconds.
Add ½ - ¾ foodservice can #10 of tomato paste.
Sauté for couple minutes.
Add Marinated chicken Sauté for few minutes until chicken
starts to cook.
Add ½ gallon cream.
Adjust salt.
Add water or cream or milk to required consistency.
Cook until chicken is cooked.
